Brussel Sprouts Salad

I am a big fan of salads and this Brussels sprouts salad is no exception.  We paired with a roasted chicken and it made for a delicious and easy dinner!

Brussels Sprouts Salad
  • 24 Brussels Sprouts, shredded
  • ½ cup Parmesan cheese, finely grated
  • 1 cup toasted walnuts, in pieces
  • 9 tablespoons extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • salt & pepper
  1. Shred the Brussels sprouts in a food processor or chop with a knife. Toss the sprouts in a bowl along with the walnuts and grated cheese. In a jar add the olive oil, apple cider vinegar, and mustard along with the salt & pepper. Put a lid on the jar and shake it up. Pour the dressing over the salad and serve immediately
