Vegetable Beef Soup

Winter is here and colder temps call for piping hot soups. This vegetable beef soup is the perfect pair for a chilly winter day. Easy, packed full of veggies and DELICIOUS!

I picked these veggies because they are my family’s favorites. Feel free to change them up to fit your family’s taste buds. You could add peas, lima beans, yellow squash, red potatoes, okra, etc.

Vegetable Beef Soup
Recipe type: Soup
Serves: 6
  • Cooking Spray
  • 1 c. chopped yellow onion
  • 1 c. chopped celery
  • 1 lb. extra lean ground beef
  • 2 cloves garlic - minced
  • 4 (14.5 oz) cans low-sodium chicken broth
  • 2 (14.5 oz) cans diced tomatoes - undrained
  • 2 c. petite carrots
  • 10-12 baby yellow dutch potatoes - quartered
  • 1 can green beans - drained
  • 1 zucchini - chopped
  • 4 mini corn on the cobb - fresh or frozen
  • 2 tbs. dried parsley
  • 2 bay leaves
  • salt and pepper to taste
  1. Spray a large stock pot or dutch oven with cooking spray. Add onions and celery and saute for 3 to 5 minutes.
  2. Add ground beef and garlic to onion/celery mixture. Season with salt and pepper and brown until no longer pink.
  3. Drain excess fat.
  4. Add chicken broth, canned tomatoes, carrots, potatoes, parsley and bay leaves and bring to a boil.
  5. Lower heat and add green beans, zucchini and corn.
  6. Cover and let simmer for 20 minutes or until ready to serve.
  7. Enjoy and Stay Warm!
